Roasted Holiday Veggies with Haskaps

Ingredients

2 cups of carrots 

2 cups of squash 

1 cup onions 

1 cup broccoli 

2 tbsp honey 

2 tbsp olive oil 

½ cup haskaps 

1 tsp salt 

2 tsp black pepper 

2 tsp nutmeg 

2 tsp dried or fresh thyme


*You can also you other vegetables as well


Directions

  1. Preheat the oven to 400°F.

  2. Cut vegetables into 1-inch cubes.

  3. In a large bowl, combine vegetables with olive oil, honey, salt, nutmeg, black pepper, and thyme, mixing well.

  4. Place the seasoned vegetables on a parchment paper-lined oven tray.

  5. Bake in the preheated oven for 20 minutes, then remove and add haskaps on top.
