Haskap & Rhubarb Crumble

 
 
 

I love the contrast of the tart rhubarb and sweet haskaps, and the oatmeal crust is the perfect texture to balance it all out. I often adjust the sweetness level by using only maple syrup instead of brown sugar, and it still turns out great. When I make this crumble, I usually use a 9-inch pie pan, but sometimes I like to switch it up and make individual servings in ramekins. I also like to experiment with adding different spices like cinnamon or nutmeg to the crust for an extra layer of flavor. It's a versatile recipe that never fails to impress my family and friends.

Ingredients

1 cup rhubarb

1 cup haskaps

2 tbsp either tapioca or cornstarch

1⁄2 cup maple syrup

Crust:

1 cup flour

1 cup oats

1 c soft butter

1/2cup brown sugar

(for less sweet you can leave the brown sugar out and use only maple syrup with the berries)

Directions

1. Preheat oven to 400°F

2. Mix the rhubarb, haskaps, starch and maple syrup together in a bowl.

3. Mix all the crust ingredients well together in another bowl.

4. Add a couple tbsp of the crust to the bottom of the pie pan.

5. Add all of the berry mix into the pan and cover with the rest of the crust.

6. Place into the oven and cook for approximately 30 minutes or until golden brown ontop.

7. Serving tip: As a dessert you can serve the crumble with some vanilla ice cream.
